This cake is the ultimate guilt-free tea time treat. It is packed with scrump-dedili-dumsious goodness and is surprisingly light in texture.
1/2 teaspoon cinnamon
2 teaspoons baking powder
sugar free dark chocolate chips (I also use the…Well, Naturally dark chocolate bar and cut it into bits)
a pinch of salt
3 eggs
1/2 cup coconut milk
3 very ripe large bananas
1 teaspoon vanilla essence
desiccated coconut (for the topping)
Line a baking tin with baking paper and put the oven on at 200C. Mix all the dry ingredients together in a bowl, along with the choc chips. Blend the banana, eggs, coconut milk and vanilla in a food processor. Combine the banana mixture with the dry ingredients and pour into your lined baking tray. Top with coconut and pop it in the oven to bake for 35 minutes. It may need a few minutes longer, it just depends on your oven and the shape of the baking tin that you use, so just keep an eye on it. Enjoy with a cuppa tea ;)
