The name of these sound a little naughty I know...but it best describes what they are! These balls are great with a cuppa tea in the morning or as an afternoon snack. They are packed with nutty goodness and are a good substitute to cereal bars and sweet tea time treats. Bear's kids love them too; they make a fabulous addition to a healthy school lunch.
2 cups raw almonds
2 cups raw walnuts
1/2 cup raw organic cocoa
1/2 tsp cinnamon
2 heaped dessertspoons organic coconut oil
3 dessertspoons organic rice malt syrup
40g dark sugar free chocolate or 1/2 cup toasted coconut (for coating)
In a food processor, combine the nuts, cocoa and cinnamon and blend well until the mixture becomes a fine crumbly texture. This may take a few minutes, depending on how powerful your blender is. Now add the coconut oil and rice malt syrup and blend well. The mixture should resemble a crumbly texture that is wet enough to hold together.
Roll the mixture into balls and coat the balls in the grated dark chocolate or the toasted coconut. Place in the fridge to allow them to set. You can leave the balls in an airtight container in the fridge for up to 7 days. I usually make a batch on a Sunday and then we snack on them in the week. Easy, yummy and most importantly, they’re good for you!
